Ingredients for 4 people
2-3 ripe tomatoes
1 potato
1 spring onion
1 leek
3 dehydrated tomatoes in oil
Extra virgin olive oil
Salt
Parsley (for garnish)
Directions
Chop the onion and leek. Pour 3 tablespoons of extra virgin olive oil into a casserole and saute the onion and leek.
Peel the tomatoes, chop them, and add them to the casserole with the other vegetables. Add the dried tomato to enhance the flavor. Let everything simmer.
